I need some good vegetarian recipes that are easy enough for me to make on weeknights. Does anyone have any suggestions? This was my summer go-to meal. It””s pretty yummy.
Can be served cold or warm:
6 servings of Penne pasta
6 oz. crumbled feta
1/4 # fresh spring peas, rinsed, ends cut off, then loosely chopped
1/3 c. chopped mint
zest of half a lemon
1/3 c. olive oil
salt and pepper to taste
Bring water to a boil, blanche peas. Remove peas with a slotted spoon, and rinse in cold water. Put pasta in boiling water (just used for the peas), cook to package instructions. Drain and rinse. Combine all ingredients in bowl.
