Pickled Green Beans

Giardiniera

I love pickles. Anything drenched in vinegar is a real treat for me. Which is why I’ve picked up an awful pickled green bean habit. I say awful because these tiny jars of goodness are $6 a pop, and at one a week it’s put a dent in the grocery budget. So I decided I’d make my own. I like pickling. I like preparing the vegetables, making witch-like concoctions, the canning process, and, especially, the pretty line of jars when all is finished. Now if only I had a root cellar.

I spent Monday making two different kinds of pickles, Spicy Pickled Green Beans and Giardiniera. I found basic recipes online and altered them to suit my taste buds. The giardiniera looks particularly pretty and seems very fancy with the fennel in it. I think the pair of these with some pretty labels, along with a pickling fork or something cute, would make great Christmas gifts. I just might do that this year.

    I too love anything and everything pickled! Once,a friend suggested I try the ‘Eat Right for Your Blood Type’ diet and I read that my blood type (O) shouldn’t eat anything pickled….and I tossed the book. I mean, who could live without pickled okra?

    yeay for pickles! and thanks for the recipes – i want to try them right now. (ps, i didn’t comment earlier on the skirt pattern, but thanks for putting that together, i bought fabric this weekend and am very excited to start)

    Those are beautiful! When we were little my Mom always grew lots of cucumbers and made our own pickles, thanks for the reminder of the great memory!

    I’m way impressed! Those are beautiful. Pickling always just seems like summer to me. And the jam… Oh, the jam! Is that next?!

    I have meant to make my own pickled green beans for SOOOO long! I like the kind that have a little hot pepper in them for a bit of heat…

    check it out. i’ve not much experiece with pickled things but i do love vinegar. how is the cookbook working out? i’m a vegetarian so always interested in hearing about new yummy recipes.

    I love “pickled” asparagus! I made that one year and it was so good! This year it will probably just be lots of jam for us…
