Hazelnut Thumbprint Cookies

You’ll have to excuse my lack of crafty posting. Some of my family is in town and we’ve been running around New England: Boston, Providence, New York. However, I did make these delicious cookies in preparation of their arrival, as usual from the Martha Holiday Cookies magazine. I’m trying to make all 100 recipes… I will eventually get there and hopefully won’t gain dress sizes in the process! These are Hazelnut Thumbprints with apricot jam. Click through for the recipe. Hazelnut Thumbprints

Ginger Cookies

Makes about 2 dozen

1/2 c. unsalted butter, softened
1 c. packed brown sugar
1/2 c. sugar
2 large eggs
1/2 c. unsulfered molasses
2 tbsp. vegetable oil
2 c. flour
1 tsp. baking soda
1/2 tsp. cinnamon
1 tbsp. ground ginger
1 tsp. ground allspice
1/2 tsp. salt

Mix butter and sugar on medium until smooth — about three minutes. Mix in eggs, molasses, and oil one at a time.

Reduce speed to low and gradually mix in flour, baking soda, salt, and spices. Cover dough and refrigerate one hour or overnight.

Preheat oven to 325. Measure 1/4 c. of sugar into a small bowl. Form balls about 2 inches, roll in sugar and space on baking sheet 3 inches apart (these grew much larger than I thought they would). Bake until cookies are flat and centers are set, about 16 minutes. Store for up to five days.

Chocolate Chip Cookies

This is my own recipe and umm is it good!
Makes about 30 cookies

2 and 3/4 c. flour
3/4 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
1 c. plus 2 tbsp. unsalted butter
1 and 1/4 c. brown sugar
1/4 c. sugar
1 tbsp. vanilla
2 eggs
2 tbsp. dark corn syrup
1tbsp. cream
2 c. chocolate chips

Cream butter and sugar. Set aside.

In separate bowl, combine dry ingredients. Set aside.

In sugar and butter bowl, mix in eggs, cream, corn syrup, and vanilla. Add in flour mixture one cup at a time. Beat to combine. Fold in chocolate chips and stir with wooden spoon.

Bake at 375 for 6-8 minutes.

Peanut Butter Cookies

Total Time Needed: 30 min.
Active Time: 15 min.
Serves: 2 dozen

8 tbsp. Unsalted butter
3/4 c. smooth peanut butter
1/2 c. sugar
1/2 c. packed dark brown sugar
1 egg
1/2 tsp. Vanilla extract
1 c. flour
3/4 tbsp. Baking soda

Preheat oven to 350 F. Cream peanut butter, butter, and sugar until light and fluffy. Add egg and vanilla and mix until well combined. In a separate bowl, mix flour and baking soda. Gradually add flour mixture to sugar mixture. Beat just to combine.

Shape about 2 tbsp. Into a ball and press and sugar with a fork. Bake for 15 min (ONLY!) and let cool.

Sugar Cookies

Total Time Needed: 3 hrs.
Active Time: 30 min.
Serves: 4 to 6 dozen

Note: Use a third of this recipe and freeze the rest for up to two months.

4 c. flour
1 1/2 tsp. Baking powder
1/2 tsp. Salt
1 c. butter
1/3 c. shortening
1 1/2 c. sugar
2 eggs
2 tsp. vanilla extract

Combine flour, baking powder, and salt. In a separate bowl, combine butter, shortening, and sugar. Beat until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat. With a spoon, stir dry ingredients in one cup at a time. Turn the dough onto a floured surface and divide into thirds. Wrap each in wax paper and cover with plastic wrap. Freeze two thirds and refrigerate the other.

After the dough has refrigerated for at least two hours, roll into 1/8 inch thick and cut into shapes. If you don’t have a cookie cutter, you can use a drinking glass to cut circles. Bake at 350 F for 12 to 14 minutes.
